

Vegan Sini Kufte
Description
Original Sini Kufte is made with meat over meat, but this is my vegan version, and it’s delicious, even those who are meat eaters, will appreciate this meal.

Instructions
- Preheat oven to 375°
- Place bulgur in a bowl add water to cover it, cover bowl let it sit for about 10 minutes, or until water is absorbed
- Meanwhile boil and mash potatoes, add to bulgur along with the red pepper paste, cumin and salt, and knead well.
- In a skillet, heat the oil, Sauté the onions until they soften, about 10 minutes, add mushrooms, cook for another 5 minutes, add spinach and the rest of the filling ingredients, cook for 2 minutes and let it rest for 5.
- In a Pirex dish, brush the bottom with oil, use half of the potato mix, press into the bottom of the dish
- Dump the spinach filling, and spread it out evenly,
- Add the second half of the potato mix on top (as demonstrated in the pictures).
- Cover and bake for 15 minutes, remove foil and bake for another 15 minutes.
